The findings included a resident who was given a single portion (3 oz.) or chopped beef with gravy, a half cup of wild blend rice and a half cup of vegetable blend. The facility’s dietary spreadsheet documents that this was only one portion. The facility was simply underserving its residents. The administrator and corporate partner of the facility stated that the resident’s dietary requirements does document the portions and it was an oversight by the dietary staff that the resident was underserved.
